Assembles ingredients required by production staff for recipe preparation. Prepares menu items for all food service utilizing standardized recipes. Pans and chills all prepared foods according to equipment manufacturer’s instructions and departmental procedures. Participates fully in Quality Assurance and Loretto State of the Heart Customer Service Program to include: Confidentiality, Caring, Courtesy, and Commitment.
Prepares all ingredients adhering to production sheets to provide ingredients in proper quantities required for recipe preparation. Cleans, dices and slices vegetables, trims and cuts meats and portion meats (when applicable), cuts and portions baked goods to assure uniformity. Accurately weighs, measures ad portions meats, vegetables and herbs and spices to ensure quality and integrity of menu items prepared by production staff. Substitute for Assistant Cook when applicable to ensure production schedule is uninterrupted. Pre-portions all ingredients according to recipes; bags, dates and labels portions and prepared items to ensure freshness and quality is maintained until used. Analyzes the Food Production Sheets to determine the amount and type of menu items to prepare.
High school Graduate or equivalent. Additional education from technical school specializing in institutional cooking is preferred. Minimum 1 – year food preparation experience in a large institution.
