Responsibilities

Assist with serving meals on a timely basis, including cook serve, tray lines and family style dining rooms.

Bring any inaccuracies (unusual items, quantities, etc.) to the attention of the Manager for clarification and/ or approval prior to filling distribution sheets.

 

 Assembles all items required by production sheets, recipes and / or tray tickets

 

 Set up meal assembly station ensuring all supplies are on hand

 

 Serve correct portions, using correct utensils to assure compliance with Nutritional Care Orders

 

 Plates food properly and garnishes food according to diet to achieve an attractive presentation.

 

 Checks all items produced in production areas prior to use to ensure food is properly bagged, sealed, and dates are visible and accurate.

 

 Rotates all inventory daily in each responsible area ensuring that items are stored chronologically (items stored first are dispatched first)

 

 Utilizing distribution sheets and pull sheets from the manager, pulls items from the food bank for use by production and / or tray line ensuring minimal interruption due to missing items

 

 Conducts daily physical inventory of all food banks and ingredient storage areas in order to keep an accurate account of items needed for next day’s service.

 

 Maintain area in a clean and sanitary fashion.

 

 Take tray carts or food carts to assigned floors. Notifies Nursing of tray arrival.

 

 Breaks down trays, cleans carts and clean all work areas for each meal

 

 Keeps beverage coolers filled as necessary and clean stock for meals.

 

 Assists in portioning of salads, desserts, and nourishments as directed

 

 Empties garbage from kitchen, dish room, cafeteria, pulper and take to proper trash receptacles. Cleans waste containers

 

 Clean and sanitize pots, pans, racks and work areas. May assist in cleaning major kitchen equipment such as ovens, kettles, mixers, slicers, coolers, walls, etc.

 

 Load soiled dishes, trays and other ware into wash machine. Remove after proper cleaning. Inspect and store as directed by site manager.

 

 Set up, breakdown and cleaning of ware wash machine after each meal or when directed by management.

 

Qualifications

 

High School Graduate or Equivalent

 On the job training

 Good reading and writing skills

 Ability to work with others
